Its a difficult one to call as it depends on the event.
Higher stakes will attract some people, and put off others. Whether your event is Most Loot Wins or Highest Single Loot will make a lot of difference too.
Most Loot Wins are good for players with uber equipment, but your numbers are limited a bit by the fact most players have no realistic chance of beating the ubers.
On the other hand Highest Single Loot wins give everyone a chance, but many of the ubers are less keen on it as they lose their advantage.
One alternative to consider is handing out a proportion of the event entry fees taken as a prize after the event. That way if you don't get the numbers you hope for, you don't end up massively out of pocket as a result. Obviously this relies a bit on trust though, so you perhaps need to get yourself established as an event organiser before that will work well.
