I'm very new to EU and I've been told I should get a mentor, so here's asking ;) Best in-game times for me is from 7-11pm UK time.
 
Times don't work for me to be your actual mentor, but if you have any questions, feel free to send me a message. I can help out most with hunting and mining.

Sorry for this late reply only I've been busy exploring Calypso - thanks v.much for offering to help :)
 
I'd also suggest looking into joining a society if you haven't already.
 
I am from holland, so we play at the same times :)
