Question: Do mobs have armor or any type of damage mitigation ?

No, they don't. Really the type of damage only matters when in PvP, as the other player's armor will protect for various amounts depending on the damage type.
 
In regard to ammo /weapon type at the moment no.

However there's nothing stopping MA from implementing it in the future.
